I previously installed PMView2000 then recently installed Paint Shop Pro 7. Now, most of my graphic files are associated with Paint Shop Pro. How do I re-associate the default file types back to PMView?

Correct. Reinstall PMView. PMView will remember all your settings and all you need to do is to keep pressing the [Next] button throughout the installation

Note that all you need to do is to reinstall. Don't uninstall, because this will remove all PMView traces from the system including all your personalized PMView settings.
